Introductory Barista - The Art of Making the Perfect Espresso

This short course provides you with the opportunity to develop basic skills and knowledge required to make delicious Espresso coffees including café latte, cappuccino, flat white, mochaccino, short and long macchiato, long black and ristretto. You will learn how to set up, operate, maintain and clean coffee equipment including the espresso machine and grinder.

Participants will gain the basic knowledge needed to gain employment in cafés, restaurants or hotel establishments as a Barista or just be able to make excellent Espresso based coffees at home. The workplace hygiene unit will allow a path for students to be a food handler  as well as be aware of the hygiene requirements as a Barista. Students may choose to do additional units that will contribute towards an industry Skill Set which could assist with job prospects. Options can be discussed with the trainer.

  • Correct cleaning, sanitising and disposal procedures
  • Coffee Beans - selecting and grinding
  • Extracting coffee
  • Texturing milk
  • Preparing and presenting the different styles of coffee
  • Espresso machines

Resources required

Uniform: For practical assessments in our TAFE Training Cafes, participants are required to wear closed in, non-slip shoes and black long pants and black shirt (no logos). This is for Workplace Health and Safety requirements and for participating in a service environment in the student training cafe.

Cairns campus:  Self paced learning will be required for unit - Use Hygiene Practices for Food Safety, resources will be issued to students on enrolment.

Whitsunday (Cannonvale) campus: Students are required to complete pre-reading prior to attending class via the Learning Management System, Connect.  Please refer to the welcome email after enrolling on instructions for how to access the system.  For helpful tips on navigating Connect, visit:


Cairns campus: Part time over 3 nights classroom training delivered on Monday to Wednesday from 4.30pm to 9.30pm plus additional one day practical assessment.

SITXFSA001 Use hygiene practices for food safety delivered on Monday; SITHFAB005 Prepare and serve espresso coffee delivered on remaining days.
One day practical assessment at our Tropics Training Coffee Shop from 8.00am to 3.00pm, date to be negotiated with teacher within a month of the enrolment date.

Cannonvale (Whitsunday) campus : Full time over 4 days, classroom training delivered in Palmers Training Restaurant, B Block, Level 1.

SITXFSA001 Use hygiene practices for food safety:  Tuesday 9am-1pm;

SITHFAB005 Prepare and serve espresso coffee:  Wednesday to Friday 9am - 3.30pm

Students are required to wear enclosed footwear and long pants for safety reasons.

Mount Isa campus: Delivered over two days, from 9:00am - 4:00pm. Please note that students will need to attend the Food Handling or provide evidence of prior completion of the Food Handling short course. 

Townsville (Pimlico) campus: Full time over 4 days classroom training delivered on Tuesday to Friday 9:00am - 4:00pm in L Plates Training Restaurant, D Block, Level 2.|SITXFSA001 Use hygiene practices for food safety delivered on Tuesday; SITHFAB005 Prepare and serve espresso coffee delivered on Wednesday to Friday.

Students are encouraged to enrol at least one week prior commencement date to ensure a seat in the course

Cairns only: During the training evening, students can bring along a meal for dinner break - heating and chilling equipment will be provided if needed.

Course price for students who already hold a current Food Handlers Certificate: $310.00.
Students are required to present their current Food Handling Certificate as evidence on the first day of class.
